Over the last few weeks we have all been a little on edge about the economic well being of our nation. Most of us have been looking at ways to pinch pennies and cut back on frivolous spending. For the McEvilly's "frivolous spending" mostly meant eating out..... a lot.
Here's my problem. When I am finished with school or work, the last thing I want to do is go to the grocery store and then cook dinner. The grocery store is always packed at 5:30pm so by the time I get home it's 6:30. Then it takes anywhere from 30min to an hour to cook. By that point the evening is half way gone and I'm too tired to do anything else.
So, here's my plan. I bought a composition notebook from Walmart. It's really kind of cute so I'm more inclined to use it. At the beginning of every week I will make a menu for each night of that week. After I have completed the menu, I will make a list of all the groceries I will need for those recipes, no more no less (that's the most important part). Each page of the notebook will feature a different recipe. At the bottom of each page I will leave space to make notes about the how the meal turned out. I started this about two weeks ago and so far so good.
So tonight I made Oven Baked Orange Roughy, Long grain wild rice and broccoli. Now I know the plating presentation in the picture is not all that, but it turned out really good. Greg ate all of his but I have enough left over for lunch tomorrow (even more penny pinching success) Here's the recipe:
1/4 cup white cornmeal
1/2 cup plain dry breadcrumbs
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon dry dill weed (that's a funny name:)
1 lb. of orange roughy fish fillets
1/3 cup milk
3 table spoons butter, melted (optional)
Combine first 6 ingredients in a shallow dish (I used a pie dish). Pour milk in another shallow dish. Dip fish in milk then dredge in breadcrumb mixture. Place fillets on a lightly greased baking dish. Drizzle with butter and bake at 450 for 10 minutes.
This recipe serves 4 so if you are only cooking for 2 just divide everything in half. The rice took 25 minutes to cook from a package and the broccoli streamed for 5 minutes in the microwave.
Here's a trick. I made this recipe last week and I only needed to make enough for 2. But I went ahead and made enough of the dry mix to put in a baggy and save for tnight. It saved about 5 minutes. Every second counts.
