Cheesy Chicken Enchiladas...Ummm :)

A couple months ago, I wrote a post about starting a weekly menu so that I would cook more. The hope was that by cooking meals at home, we would save money and consume less calories. I do think that it has helped cut costs because eating out is expensive! However, any rational person would agree that Cheesy Chicken Enchiladas wont help cut inches from the waste line. Nevertheless - these enchiladas are always a hit (per any Sandefur or friend of a Sandefur)
Greg has been requesting them for weeks. So last Tuesday I obliged and here was the result:

This recipe will feed eight

  • 1 block cream cheese
  • 1 lb. chicken
  • 1 lime
  • 2 packages fajita seasoning
  • 1 pint heavy cream or 1/2 & 1/2
  • 1 t. vinegar
  • 1 c. mozzarella
  • 1/2 c. cheddar
  • 8 flour tortillas

  1. Preheat oven to 350 degrees. Cook chicken in boiling water with quartered lime and 1 package of fajita seasoning.  
  2. In a bowl, mix cooked chicken with cream cheese. To soften cream cheese, microwave for one minute and/or add 1 tablespoon broth from cooked chicken.
  3. Butter both sides of tortillas & fill with chicken cream cheese mix. Roll each enchilada and place in 9x13 greased baking dish. 
  4. In a bowl, whisk together heavy cream, fajita seasoning, & vinegar.
  5. Pour this mixture over enchiladas.
  6. Top with cheddar and mozzarella; bake for 20 min.

Umm, the BLOCK of cream cheese made me cringe :)

Yay! TWO comments.. thats a record! Hey I never said these were healthy. A block of cream cheese is kinda scary but what the heck... it's Christmas :)
