After attending the Carol of lights we had a few friends over for coffee and dessert. Greg had this idea to make a souped up pumpkin pie. He wanted it to have chocolate, pecans, heath bar and carmel. I made a chocolate/graham cracker crust with normal pie filling (courtesy Paula Deen). This recipe will make too pies.
Ingredients:
apx. 16 graham crackers crushed
1 stick melted butter
1 (1.55 oz) Hershey bar
1 (8oz) package cream cheese (No Cringing Lauren- its the holidays for cry'n out loud :)
2 cups canned pumpkin
1 cup sugar
1/4 tsp salt
1 egg plus 2 egg yolk (beaten together)
1 cup half-and-half
1/4 cup (1/2 stick) melted butter (yes, more butter)
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground ginger
As much Heath bar and pecans (crushed together) and caramel your little heart desires
Directions:
Preheat oven to 350 degrees F.
Crust: In large bowl mix together crushed graham crackers and melted butter. Then press this mixture into your pie dish, covering sides as well.
Next, break up pieces of Hershey bar and place on top of graham cracker crust.
Filling: In the same large bowl (my momma taught me well) beat cream cheese with a hand beater until soft. Then add pumpkin and beat until combined. Add the sugar and salt and beat until combined. Add the next three ingredients and beat until combined. Finally add the next three ingredients and beat until combined.
Pour filling into prepared crust. Bake for 75 min, or until center is set. Crumble Heath bar and pecans on top, drizzle with caramel and bake 5 more min.
